So, I've just done a search on the PID reported in 'System Report | Graphics/Displays' as 6fdf and it's a 'Polaris 20 XL ' so the machine is seeing the RX 580 GPU, it's got to be the missing firmware patch from the Mojave installer.

I almost forgot, I booted the machine into Manjaro before I installed Catalina, recovered the *.rom info from the GPU and safely stored it on a Fedora 34 machine. I didn't build a USB installer, installed to the NVMe and after around 45 minutes I had a working Catalina installation. reboot the cMP into recovery mode, open a terminal, disable sip, reboot and run the patcher. I decided to install Catalina using dosdude1's patch yesterday, this needs sip to be disabled. So, continue to install Mojave, no problem - no boot screen of course but wait a short while after the chime and the Mojave setup screens appear. Started the process according to the on screen instruction, eventually booted back in to HS, go to system report and the fw is now 144.0.0.0.0 :)

Sunday evening: Start the Mojave installer, get the message regarding the firmware update (fw was 140.0.0.0.0 at the time). I didn't have a lot of time on Saturday night, I left the machine downloading the Mojave installer overnight.

The newly flashed GPU is reporting as an RX 580, the PID is now 67df (previously 6fdf) and I see "Metal: Supported, feature set macOS GPUFamily2 v1" in the system report. The 'RX 580' was waiting for me when I got home from work last Saturday evening, I installed it in my cMP (I'd installed High Sierra on the NVMe while I was waiting for the GPU's return). Update 6th July 2021: Result! (I feel like I should be posting this on r/hackintosh )
